Many of you have been asking me for it and there it is: here is the summary of what I usually eat in a day. Beyond the control of my calories, the interest here is to show you how I organize myself to eat healthy while working from home, because as you know it can sometimes represent a real challenge.
I have been practicing intermittent fasting for 2 years and I have never felt better. So I start my day with a good breakfast. Usually pancakes. To save time I prepare my dough the day before, and in the morning I only have to cook a few ladles, and add the toping that suits me.
Around 1pm I prepare my lunch, most of the time I opt for a big mixed salad. In summer it is for me the perfect meal to refresh myself and not to weigh me down for the rest of the day.
When you say intermittent fasting, you say mid-afternoon snack. Since this is my last meal of the day, my snack is relatively copious. I eat as much fruit as I need and I accompany it with almonds, hazelnuts or other types of nuts.
